A Guide to Homemade Blackberry Jam

Pectin (optional, for thicker jam)

Step 1: Gathering the Blackberries



Start by sourcing the freshest blackberries you can find. If you're lucky, you might even be able to pick them yourself at a local farm, or in your own back yard. We love our blackberry bushes. We especially love wathcing our kiddos enjoy a healthy snack while playing in the backyard. Make sure to wash the berries thoroughly and remove any stems or leaves.

Step 2: Preparing the Equipment


Before you begin the jam-making process, ensure you have all the necessary equipment ready:


Large pot or preserving pan

Mason jars and lids

Funnel

Ladle

Wooden spoon

Candy thermometer

Step 3: Cooking the Berries


Place the blackberries in the pot and crush them using a potato masher or a fork. Add sugar in proportion to the quantity of berries, usually about 1:1 ratio (1 cup of sugar for 1 cup of crushed berries). The sugar helps preserve the jam and enhances its flavor. Stir the mixture and let it sit for about 30 minutes to allow the berries to release their juices.

Step 4: Cooking and Testing for Set


Place the pot on medium heat and bring the mixture to a boil, stirring frequently. As it heats up, you can add a splash of lemon juice to enhance the tartness and aid in the gelling process. If you prefer a thicker consistency, you can add pectin or agar agar at this stage, following the manufacturer's instructions.


As the mixture boils, use a candy thermometer to monitor the temperature. The jam will start to thicken as it reaches the set point, typically around 220°F (104°C). To test if the jam is ready, place a small amount on a chilled plate and run your finger through it. If it wrinkles and holds its shape, it's ready.

Step 5: Filling and Sealing the Jars


Once the jam reaches the desired consistency, remove it from the heat. Carefully ladle the hot jam into sterilized mason jars using a funnel, leaving about 1/4 inch of headspace. Wipe the rims of the jars clean, place the lids on top, and screw on the bands until they're fingertip tight. (I learned the hard way that you dont want to go all hulk while putting on the lids before processing.... you lids will buckle and not seal. )

Step 6: Processing the Jars (Optional)


If you want your jam to have a longer shelf life, you can process the sealed jars in a water bath canner for about 10-15 minutes. This step helps create a vacuum seal that prevents spoilage. However, if you plan to consume the jam relatively quickly, this step might not be necessary.
