Homade Granola (oil Free)

Yield: 6 cups (24- 1/4 cup servings)

Ingredients

  • 4 Cups Whole Oats (don't use quick oats)

  • 1/2 cup Chopped Nuts of your choice

  • 1 cup Unsweetened Ribbon Coconut

  • 1/2 cup Brown sugar

  • 1/4 cup Honey

  • 2 TBSP. Water

  • 1 1/4 tsp. Cinnamon

  • 1/16 tsp. Ground Nutmeg

  • 1/2 tsp. Salt

  • 1 Tsp. Vanilla Extract

  • 1/4 Tsp. Baking Soda

  • 1/2 cup Frozen Mini Semi-Sweet Chocoloate Chips


(minus baking soda and vanilla)
Granola Ingredients

Directions

  1. Preheat oven to 300°F and line a baking sheet with parchment paper.

  2. In a large mixing bowl, toss together oats, nuts, and coconut.

  3. In a medium sauce pan combine brown sugar, honey, water, cinnamon, nutmeg and salt

  4. Bring mixture to a boil stirring frequently.

  5. Boil for 1 min whisking constantly. Remove from heat, stir in vanilla and baking soda.

  6. Whisk until mixture is foamy. (about 10 seconds). Carefully pour hot sugar mixture over dry ingredients. Toss to evenly coat.

  7. Spread mixture on tray lined with parchment. Bake in pre-heated oven for 35-40 minutes, until golden brown. Take granola out twice during this cooking time to toss to ensure even baking.

  8. Once the granola is evenly cooked and golden brown, take out and toss in frozen chocolate chips.

  9. Let cool completely. (Granola wont be crisp until cooled).

  10. Add in optional toppings, raisins, craisins,Thrive Life Freeze Dried Cranberries, Thrive Life Freeze Dried Strawberries, Thrive Life Freeze Dried Raspberries, Thrive Life Freeze Dried Mango.

Our kiddos love Granola straight from the pan, in a baggy as a snack and with a fruit parfait They especially love when I pull out the fancy glass cups and make a layered yogurt parfait. This granola is a favorite, we all enjoy it, we hope you do too!
