Eggplant is a new found love for me and my family, I was introduced to in 4years ago... (I did not even now it existed until than) There are many great ways to cook and use eggplant, and just like anything else new it takes a little bit to get used to cooking with it. I remember the first time I cooked it, i did not cook it long enough, it was super tough and not good! But I have tried many times since, and found so many good recipes that we love!
