I remember using tofu for the first time and thinking "This is so weird!" Now 4 years later we use tofu multiple times a week and LOVE it.

I will say I have learned that reading the reviews at the bottom of recipes has been a big help for me and reminds me that we all taste different so tweak it how you want it to taste. :)
