Peel the skin or leave it on for a rustic touch – it's a matter of personal preference. I prefer to peel my sweet potatoes.

Our Thanksgiving Sweet Potatoes:

There are so many ways to make sweet potatoes, for our thanksgiving we like to give our sweet potatoes some sweetness. When I first brought this dish to my in-laws for Thanksgiving many years ago, everyone was skeptical... they rarely had sweet potatoes at Thanksgiving. I remember daring many of my husband's siblings to try them. They were all very surprised and one of my sister-in-law requests them every year for Thanksgiving.

"Try it, you'll like it!"

We prepare our sweet potatoes, by cutting them into uniform cubes and placing them in a 9x13 dish. We sprinkle with brown sugar and a couple of tablespoons of coconut oil (or butter). Stir so that the sugary mixture coats all the potatoes. *Add a little bit of liquid if needed) Cover with foil, and place in a preheated oven ( 375) for 1 hour or until tender. Right before serving cover the top of your potatoes with mini marshmallows place in an oven on broil, and cook until marshmallows are puffy and golden brown. ENJOY!!
