We love tofu, it's so versatile. For your "fish" tacos you can make crispy tofu, marinated tofu, or a tofu crumble. When my husband and I went to Maui this last year we had tacos at many locations. Our favorite was made with crispy tofu diced up in the taco. Today I want to share with you our yummy version of plant-based street tacos.
Tropical Salsas:
Pineapple Salsa: Sweet and tangy, pineapple chunks, and mango chunks, mixed with red onion, and lime juice add a burst of freshness. This last time we made our Hawaiian plant-based tacos I had saved a mango and was so excited to use it in my salsa, but when I cut it open I was so sad to find it was not good anymore. 😢 Then I remember Thrive Life Mangos!! (They also have pineapple)
I ran and got my can, dumped some in a bowl, and rehydrated them, within 10 min I had them in my salsa ready to go! I love my Thrive Life food storage/ pantry!
Mango Avocado Salsa: Creamy avocado combined with ripe mango, red pepper, and a touch of jalapeño for a spicy kick.
Accompaniments:
-Shredded Purple Cabbage: Adds a vibrant pop of color and a satisfying crunch.
-We like to make a cole slaw and add in green onions and sliver almonds.
-Coconut-Lime Crema: A luscious coconut-based sauce infused with zesty lime, creating a tropical flavor explosion. (I have not tried this yet, but want too!)
