How to Make the Best Tofu Scramble

Ingredients:
1 block firm or extra-firm tofu, drained and crumbled
1/2 teaspoon turmeric (for color and health benefits)
1/4 teaspoon black salt (Kala Namak, for an eggy taste)
1/2 teaspoon black pepper
1/2 teaspoon paprika (optional, for extra flavor)
1/2 cup chopped veggies (e.g., bell peppers, onions, mushrooms, spinach)
Impossible sausage *optional.
Instructions:
Prepare the Tofu:
Drain the tofu and press it to remove excess water. Using a fork or your hands, crumble it into small, bite-sized pieces.
Sauté the Vegetables:

Heat olive oil in a pan over medium heat.
Add chopped veggies and sauté for 3-5 minutes until soft.
Add the Tofu & Spices:
Add the crumbled tofu to the pan and mix well.
Sprinkle in turmeric, black salt, black pepper.
Stir to evenly coat the tofu in the seasonings.
Continue to cook for another 3-5 minutes, stirring occasionally, until everything is well combined and heated through.
Taste & Adjust:
Taste your tofu scramble and adjust the seasonings as needed. If you prefer a stronger eggy flavor, add a little more black salt.
Serve & Enjoy:

Serve hot with toast, sourdough pancakes, avocado, or as a filling for breakfast burritos!
