We Love Sourdough Bread

Sourdough bread has taken the culinary world by storm, celebrated for its tangy flavor, crusty exterior, and chewy interior. But what if you could elevate this artisanal bread further? Enter hybrid sourdough, a delightful fusion of traditional sourdough techniques and commercial yeast, creating a loaf that is both approachable and delicious.


What is Hybrid Sourdough?

Hybrid sourdough combines the natural fermentation process of wild yeast and bacteria from a sourdough starter with the predictability and speed of commercial yeast. This method allows bakers to enjoy the unique flavors and textures of sourdough while also benefiting from the reliability of quicker rising times.

Ingredients You’ll Need

To make hybrid sourdough bread, you'll need the following ingredients:

  • Sourdough Starter: A well-fed starter that is bubbly and active.

  • All-Purpose or Bread Flour: This forms the base of your dough.

  • Water: Preferably filtered or bottled, at room temperature.

  • Commercial Yeast: Instant yeast works best for this method.

  • Sugar: for the yeast to eat.

  • Salt: Essential for flavor and regulating yeast activity.


Recipe

  • 3 1/2 cups Bread Flour

  • 2 teaspoons Sugar

  • 2 teaspoons Instant Yeast

  • 1 1/2 teaspoon Salt

  • 1 1/3 cups Warm Water

  • 1 cup Sourdough Starter


The Process

Step 1: Prepare the Sourdough Starter

Ensure your sourdough starter is active by feeding it a few hours before you start baking. It should be bubbly and doubled in size. (I also like to use my discards for my sourdough bread, so i can make multiple loafs)

Step 2: Mixing the Dough

In a large mixing bowl, combine your flour, water, and active sourdough starter. After mixing, let it rest for about 30 minutes. This process, known as autolyse, helps with gluten development. (If you don't have time for this step, you can skip it an add all ingredients, mix and let ferment for 1-2 hours)

Step 3: Adding Commercial Yeast, Sugar and Salt

Sprinkle the instant yeast and salt over the dough and knead until well incorporated. This can be done by hand or with a stand mixer fitted with a dough hook.

Step 4: Bulk Fermentation

Cover the dough and let it rise in a warm spot for 1-2 hours.

Step 5: Shaping the Loaf

Once the dough has doubled in size, gently turn it out onto a lightly floured surface. Shape it into a round or oval loaf, depending on your preference, and let it rest for about 20 minutes.

Step 6: Baking

Preheat your oven to 425°F. Once heated, Bake for 15-20 minutes, then reduce the heat and bake for an additional minut25-30 minutes until golden brown.

Step 7: Cooling

Allow the bread to cool completely on a wire rack before slicing. This resting period helps set the crumb structure.

Step 8: ENJOY
