Who can resist the mouthwatering aroma of freshly baked cinnamon rolls wafting through the kitchen? The combination of soft, doughy layers swirled with coconut oil, sugar, and cinnamon is simply irresistible. While store-bought versions are readily available, there's something incredibly satisfying about making your own homemade plant-based cinnamon rolls. Not only will your kitchen be filled with a tantalizing scent, but the process itself is rewarding and the results are truly delectable. So, roll up your sleeves and let's embark on a delightful journey of making homemade Plant-Based cinnamon rolls!


Step 1: Gather the Ingredients

To create these heavenly treats, you'll need a handful of pantry staples:

  • 5 cups Flour *Use 1 to 1 or Thrive Life Gluten free flour to make Gluten free

  • 1 ¼ cup unsweetened Almond Milk

  • 2 Flax Eggs (2 Tbsp. Ground Flax + 6 Tbsp water, let mixture sit for 5 min before adding)

  • ½ cup Coconut Oil

  • ¼ cup Honey (or Thrive Life Honey Crystals)

  • 1 Tbsp. Yeast

  • 1 tsp. Salt

Step 2: Prepare the Dough

Creating a soft and pillowy dough is crucial for achieving irresistible cinnamon rolls. I like to use my bread maker. I have found that I am able to get that softer fluffier dough. Place the flour and salt into the bread maker. In a microwave safe bowl, add milk and coconut oil and heat in the microwave for 1 min and 40 sec. Add yeast and honey (Thrive Life Honey Crystals are the best. They carry such clear flavor and are easy to scoop and dump instead of dealing with the sticky honey from the bottle.) Allow milk mixture to sit and grow. While you wait, make your flax eggs. In a small bowl add your flax and water, stir and allow to sit for 5 min before putting in with flour mixture.) Pour the milk mixture into the dry ingredients and push start on your bread maker.


Step 3: Roll and Fill

Once the dough has risen, gently punch it down to release any air pockets. Roll out the dough on a floured surface into a large rectangle, about ¼ inch thick. Spread about 2-4 Tbsp of softened coconut oil over the surface of the dough, leaving a small border around the edges. Sprinkle generously with cinnamon sugar (1/4 cup sugar + 1 tsp. cinnamon.) Spread 1/2 cup brown sugar evenly over the dough, ensuring it reaches all the corners.


Step 5: The Swirl and Cut

To create those iconic swirls, carefully roll up the dough starting from the longer side. Once rolled, cut the dough into individual rolls, each about an inch thick. I cut the long roll in half and then cut each half into 6 even pieces to make 12 Cinnamon rolls. Place them in a greased baking dish, tucking the tails (or ends) under the roll so they do not poke out. Leave some space between each one. Cover the dish and let the rolls rise for another 30-45 minutes. This step ensures that the rolls become light and fluffy when baked. Admire the beautifully swirled layers before baking.

Preheat your oven to 350°F. Once the rolls have risen again, bake them for 15-18 minutes, or until they turn golden brown. The anticipation of that final step is almost overwhelming as the scent of cinnamon fills the kitchen, promising a delightful treat. While they cool slightly, prepare a simple glaze by whisking 1-2 cups of powdered sugar, 1 teaspoon vanilla extract and water to desired consistency. Drizzle the frosting over the warm cinnamon rolls and let it melt into a creamy glaze.

  • 5 cups Flour *Use 1 to 1 or Thrive Life Gluten free flour to make Gluten free

  • ½ cup Coconut Oil

  • ¼ cup Honey (or Thrive Life Honey Crystals)

  • 1 Tbsp. Yeast

  • 1 tsp. Salt

CINNAMON ROLL DIRECTIONS

Bread maker

Quick Dough (Can make in mixer, or bowl)

Roll out into large rectangle

Spread with 3 Tbsp. melted coconut oil

Sprinkle generously with cinnamon sugar (1/4 cup sugar + 1 tsp cinnamon)

Sprinkle with 1/2 cup brown sugar

Roll into one log (sugar inside)

Cut into 12 rolls (or more if you want smaller rolls)

Place on greased baking sheet

Let rise for about 30 minutes

Bake @ 350 for 15-18 minutes


Vanilla Glaze

1-2 cups powdered sugar

1 tsp. vanilla

1-2 Tbsp water (to desired consistancy)


Vanilla Frosting

1 cup coconut oil

4 cups powdered sugar

¼ cup almond milk

1 tsp. vanilla

Whip together until very creamy.
