For Plant-Based gyros, the marinade typically includes soy sauce, Thrive Life vegetarian chicken bullion, garlic, oregano, and a blend of spices. These ingredients infuse the plant-based protein with rich, savory flavors reminiscent of traditional gyros.



The Pita: Soft, fluffy pita bread is essential. It serves as the vessel for holding all the delicious components together. Many recipes use store-bought pita, but making your own can add an extra touch of authenticity.



The Toppings: Fresh vegetables like tomatoes, cucumbers, and red onions add crunch and freshness. These are usually complemented by a Plant-Based tzatziki sauce made from dairy-free yogurt, cucumber, garlic, and dill.



The Sauce: Tzatziki is a classic gyros sauce made with cashews, cucumber, vinegar, garlic and herbs. Plant-Based tzatziki uses cashews as a substitute, maintaining the creamy and tangy profile that perfectly complements the gyros.



Making Plant-Based Gyros at Home


Ingredients:

4 pita breads


Marinade

1 block of tempeh, sliced thinly

1 1/2 teaspoons. garlic

2 teaspoons. oregano

2 teaspoons. thyme

2 tablespoons soy sauce

1/2 teaspoons salt

1/4 teaspoon pepper

1 cup water


Tzatziki Sauce

1 cup cucumber peeled and grated

1 cup cashews

3/4 cup water

1 1/2 tbsp lemon juice

2 1/2 teaspoon vinegar

3 cloves garlic, minced

1/2 teaspoon salt

pinch of pepper

1 1/2 tbsp fresh dill


Toppings

1 tomato, sliced

1 cucumber

some lettuce

1 red onion, thinly sliced


Instructions:


Marinate the Protein: In a bowl, garlic, oregano, thyme, soy sauce, salt, pepper, water and Thrive Life vegetarian chicken bullion. Mix. Add tempeh slices and marinate for at least 30 minutes (for as long as possible)


Cook the Protein: Heat a skillet over medium heat. Cook the marinated tempeh slices until they are browned and crispy on the edges.

  • You can also place on a cookie sheet in the oven until crispy. (350 degrees for 30-35 min)



Prepare the Potatoes: Scrub and slice potatoes of choice into long skinny strips, lightly toss in olive oil and garlic salt for seasoning. Spread out on a cookie sheet with your seal pat or parchment paper. cook at 450 degrees till crispy.


Prepare the Tzatziki: In your food processor placed your cashews, water, lemon juice, vinegar, garlic salt and pepper. mix well, add grated cucumber, and dill. Mix well and adjust seasoning to taste.


Assemble the Gyros: Warm the pita breads and spread a generous amount of Plant-Based tzatziki on each. Layer with cooked tempeh, potatoes slices,sliced tomatoes, cucumbers, and onions


Serve and Enjoy: Fold the pita around the fillings and serve immediately. Enjoy your homemade Plant-Based gyros with a side of Greek salad or some roasted potatoes for a complete meal.
