Beef and Broccoli....but much much better
I love trying new recipes and especially making old recipes into plant based recipes! This last Sunday I was going to make my husband his favorite fried rice dish with tofu, when I discoved I was out of tofu. And then I had this ahha moment when I saw the broccoli in the fridge, "beef and broccoli." I would always get beef and broccoli growing up, but only for the broccoli. I always left the beef behind. It was too chewy and stringy for me. So I decided to try and make a plant based beef and broccoli, Soy Curls and Broccoli.
It turned out AMAZING! So I wanted to share it today! 🤣 The same great flavor and look, but even better.....plant based. With no chewy and stringy meat. My husband and kids are always good sports about trying my new creations. This one was a hit.
This dish was fast, simple and so good. I love plant based cooking. It's fun and creative. I hope you enjoy trying this new recipe as much as I did.
Soy Curls and Broccoli
Ingredients
2-3 cups soy curls
2 Tbsp olive oil
6 cups chopped broccoli (fresh, frozen, or Thrive life freeze dried broccoli)
Sauce
1 tsp ground ginger
3 cloves garlic, minced
1/2 cup hot water
6 Tbsp soy sauce
3 Tbsp packed brown sugar
1 1/2 Tbsp corn starch
1/4 tsp black pepper
2 Tbsp sesame oil
Directions
Start by soaking your soy curls in warm water ( I added 2-3 Tbsp Thrive life vegetarian beef bouillon)
Chop up 1-2 lbs of broccoli into bite size pieces
Put all ingredients for your sauce in a bowl and mix well to dissolve the sugar.
Heat a large pan with olive oil and let the broccoli saute for 4-5 minutes. Toss several times until broccoli is bright green.
Drain your soy curls and add them to the pan with your broccoli. Cook for 4-5 min.
Add the sauce, reduce heat to low and simmer for 3-4 minutes until it thickens. Serve over white rice topped with sesame seeds.
