Spring is just around the corner! I know that because my husband and I have been passing a
cold back and forth recently. We were both feeling a little under the weather last week, so I
went to the kitchen to concoct a quick, easy, and delicious soup. It turned out even better
than I expected, and it was just what we needed to warm up!
30 Minute Chicken Noodle Soup
Ingredients
Soup:
Water
4 Tablespoons Vegetarian Chicken Bouillon
2 Cups Diced Chicken
½ Cup Carrot Dices
½ Cup Celery
1 Cup Sweet Corn
Juice from 1 lemon
2 Cups Potato Dices
Noodles:
2 Large Eggs
½ Teaspoon Salt
2 Tablespoons Milk
1 1/2-2 Cups flour
Directions
Put 12 cups water, vegetarian chicken bouillon, chicken, carrots, celery, sweet corn, lemon juice in a large pot and put it on the stove on a high heat setting.
Once your soup has been boiling for about 10 minutes, in a separate bowl combine potato dices and 8 cups boiling water. Let the potatoes sit for 3-5 minutes, drain, then add the potatoes to the broth that has been boiling on the stove.
Now we will get started on the noodles! In a medium sized bowl combine milk, eggs, salt together and mix until smooth. Add one cup flour and mix again. At this point you will add 1 spoonful of flour at a time until you are able to form a ball with the dough. Next you will knead the dough with your hands for about 3-5 minutes. Move the dough ball to a floured surface and let it rest for 5 minutes.
After 5 minutes have passed, roll out your dough until it is about ¼ inch in thickness and then let it sit for an additional 5 minutes. (This makes it so that your noodles don’t shrink when they are being cut.) Now you will want to use a knife or a pizza cutter to cut your noodles into long strips. Just remember that the noodles will increase in width when they’re added to the boiling water! (When I was first learning to cook, I made a batch that were monster sized… That was definitely a mistake I did not make twice!)
After you have cut your noodles, add them to the pot and let the mixture boil for another 2-3 minutes.
