Pot Pie

Pot Pie with Thrive life ingredients is more versatile than you can imagine.


All growing up I knew pot pies as the little store-bought pies that you cooked in the oven fast, once it was out you flipped it over onto a plate and magically you had a personal pot pie. (This was a daddy go to for my dad when my mom was out). When I married into the Tanner family, I heard of the famous chicken pot pie that they had almost every Monday night growing up. At first, I was like cool.... what's the difference? Oh, I learned what the difference was and fell in love with it. My sweet husband surprised me one night after a long 12-hour shift at the hospital with a hot homemade chicken pot pie! And if that is not sweet enough, he had even made gluten free to meet my current dietary needs. How sweet right? Oh, my goodness how delicious, it was amazing! I remember eating way too much but loving it.


Versatile, tasty, and fun!

Since that first exposure to a TRUE pot pie, we have made many many pot pies over the years. Like I mentioned before, the first few years were gluten free, then we switched to a non-gluten free, and now we have gone to a meatless pot pie, and all are delicious. Thrive Life has made all of these renditions of the pot pie so simple. With the freeze-dried food being chopped and ready to go, all you have to do is measure out the amount and add it to the water that is in the pot. Thrive Life also carries a gluten free flour, making it possible to make that tasty crumbly crust gluten free.


Pot Pie (Chicken Pot Pie, Gluten Free Chicken Pot Pie, Chickpea Pot Pie, Chicken-less Pot Pie)



Ingredients


Filling


Crust

  • 5 1/3 cups Flour, Thrive Gluten Free Flour (you may need to add xanthan gum per package instructions if making gluten free).

  • 2 tsp. Salt

  • 2 cups Shortening or Butter.

  • 1 1/4 cups Cold Water


Directions


Filling Instructions

  1. Combine vegetables and meat or meat substitute of choice, bullion, and water in a large pan. Bring to a boil and then simmer on medium low heat for 20-25 min. (until the carrots and potatoes are tender.)

  2. In a smaller pan make the gravy. (You do want the gravy to be thick. Thicken with water and corn starch mix if needed or add 1-2 tablespoons extra flour at the beginning of making the roux)

  3. gradually pour gravy into pan with veggies, stirring constantly. Bring to a boil until desired thickness.

  4. Remove from heat and set aside while you make crust.


Crust Instructions

  1. Preheat oven to 450°

  2. Mix salt into flour until well-combined (I like to use a Bosch mixer with the whisk attachment).

  3. Cut in Shortening or Butter of choice (Just a few pulses of the mixer).

  4. Add cold water and mix until dough forms (make sure to remember to change to the dough hooks before adding water).

  5. Divide dough into two portions and roll out the first thinly for the bottom. Place into a 4-quart casserole dish.

  6. Pour filling over bottom layer of crust.

  7. Roll out remaining dough for the crust. Place carefully over the pot pie filling.

  8. Decorate crust as desired (my kids love to choose a seasonal decoration) or you can just do a few slits for some hot air to escape.

  9. Cook in preheated oven for 40-45 minutes, or until golden brown.

  10. ENJOY!!!



*Pie crust tips

  • Don't overmix the dough. Mix only until dough is formed and well-combined.

  • Use COLD water to maximize flakiness!

  • When rolling, periodically lift dough from each side and dust underneath with more flour to prevent sticking. Dust lightly on top as well, as you roll.

  • To place crust in the dish and over the filling, fold it over in half, and lift it that way placing it on one half of the pan. Then unfold over the other half. This makes the dough easier to handle.
