The Delight of Plant-Based Fresh Apple Pie

Ingredients You'll Need


For the Crust:


2 1/2 cups all-purpose flour, plus more to dust, *measured correctly

1/2 Tbsp granulated sugar

1/2 tsp sea salt

1/2 lb coconut oil

7 Tbsp ice water, (7 to 8 Tbsp)


For the Filling:


2 1/4 lbs Granny Smith Apples, peeled, cored 6-7 apples (7 cups thinly sliced)

1 1/2 tsp cinnamon

8 Tbsp coconut oil

3 Tbsp all-purpose flour

1/4 cup water

1 cup granulated sugar


Instructions


1. Prepare the Crust:


In a large bowl, combine the flour, salt, and sugar.

Cut in the chilled coconut oil or vegan butter until the mixture resembles coarse crumbs.

Gradually add cold water, mixing until the dough holds together. Divide the dough into two disks, wrap in plastic, and refrigerate for at least 30 minutes.


2. Make the Filling:

Melt coconut oil in a medium saucepan over medium heat. Whisk in 3 Tbsp flour then simmer for 1 minute, whisking constantly. Whisk in 1/4 cup water and 1 cup sugar and bring to a boil. Reduce heat and continue simmering for 3 minutes, whisking frequently then remove from heat.

Peel, remove cores, and thinly slice 7 cups of apples and place them in a large bowl. Sprinkle the top with 1 1/2 tsp cinnamon and toss to combine. Pour the sauce over the apples and stir to coat the apple slices.


3. Assemble the Pie:


Preheat your oven to 425°F (220°C).

Roll out one dough disk on a floured surface to fit your pie pan. Transfer the crust to the pan, trimming any excess.

Pour the apple filling into the crust, spreading it evenly.

Roll out the second dough disk to cover the top. You can create a lattice pattern or simply place it whole on top. Seal the edges by crimping with a fork.


4. Bake:


Cut slits in the top crust to allow steam to escape. Brush with a bit of plant-based milk or melted coconut oil for a golden finish. ( I tried a lattice this time .. it was pretty fun)

Bake in the preheated oven for 15 minutes, reduce heat to 350 degrees and cook for 45 min or until the apples are tender and the crust is golden brown. If the edges brown too quickly, cover them with foil.


5. Cool and Serve:


Allow the pie to cool for at least an hour before slicing. This will help the filling set. Serve it warm or at room temperature, perhaps with a scoop of vegan vanilla ice cream or a dollop of coconut whipped cream.
