No-bake cookies are one of my husband's favorites, so it is frequently made at our house, for all occasions. Here's our dairy-free and delicious recipe for no-bake chocolate peanut butter cookies to get you started:



Ingredients:


1 1/3 cups sugar


1/2 cup coconut oil


1/2 cup almond milk


1/4 cup cocoa powder


1/2 cup peanut butter


3 cups quick-cooking oats


1 teaspoon vanilla extract



Instructions:


In a medium saucepan, combine sugar, coconut oil, almond milk, and cocoa powder. Bring to a boil over medium heat, stirring occasionally.



Once boiling, let the mixture cook for 1 1/2 minutes, then remove from heat.



Stir in the peanut butter until smooth, then add oats and vanilla extract. Mix well.



Drop spoonfuls of the mixture onto wax paper or a lined baking sheet. Allow to cool and set for about 30 minutes.
